OUT OF TIME

Our restaurant is nestled on the hillside of the village of Gassin

and overlooks the wine estates and the Gulf of Saint-Tropez.

Run since 1979 by the Mouret family, you will discover refined southern cuisine, Provencal specialties in an exceptional setting.

The room with the bourgeois and refined elegance of a Provencal country house. On sunny days, all meals are served on the panoramic terrace.

It is a must-see place on the Saint-Tropez peninsula,

located near Ramatuelle, Grimaud and Sainte-Maxime.

Our establishment has been referenced for two generations

in the best guides to French gastronomy.

Flavors

SEASONAL PROVENCAL CUISINE

I didn't want to revolutionize anything, I brought my knowledge and my style while keeping some of my father's great classics.

My dishes inspired by southern cuisine change with the seasons.

I like to keep the product natural and combine it with seasonal vegetables, aromatic herbs, citrus fruits or sweet spices.

Sauces have an important place in my cooking. They bring to each of my plates an extra soul and flavor.

Authenticity

A UNIQUE MOMENT

On sunny days, meals are served under the soft foliage

of our hundred-year-old oaks.

The tables are deliberately spaced for more privacy.

The panoramic view of the vineyards, the sea and the hills is sublime.

Here, the days go by but are not alike ...

The brightness of the seasons, the evolution of nature and the song of birds

make each meal a unique and privileged moment.

The atmosphere of the room is warm.

It is very popular for family meals, with friends or lovers by the fireplace.

An authentic place, a haven of peace

far from the noise and the tropézian crowd.

FROM FATHER TO SON

Belonging to my family for generations,

this old wine farm was built around 1890.

In 1979, my father Fernand, chef and my mother Mireille, daughter of restaurant owners from Lyon transform the building into a restaurant.

My brother Julien and I grew up there.

We caught our passion for cooking there and made it our job.

In 2004, after 25 years, my parents wanted to retire.

I naturally came back to La Verdoyante after leaving it ten years to improve myself in the kitchens of starred chefs.

This is how I took over the stoves of the family restaurant,

supported by my wife Bérénice, also from the luxury hotel industry.
